Ingredients

  • salt and pepper to taste
  • 2 tbsp olive oil, divided
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lb fettucine
  • 1 bunch asparagus, cut 1
  • 1/2 cup Parmesan cheese, grated
  • lemon zest from 1 lemon

Quick Asparagus & Lemon Pasta Directions

  1. Bring large pot of salted water to a boil.
  2. Meanwhile, heat 1 Tbsp olive oil in medium skillet. Sauté onion until soft; add garlic and sauté additional minute. Remove from heat.
  3. Add pasta to boiling water. Cook according to package instructions. In final 2 minutes, reserve 1 cup pasta water, then add asparagus to boiling water.
  4. Drain cooked pasta and asparagus. Return to pot; add 1 Tbsp olive oil, onion and garlic mixture, Parmesan, lemon zest and 1/2 cup reserved pasta water. Season with salt and pepper; add additional pasta water as needed.
  5. Serve.

Recipe notes

Refrigerate any leftovers.
